STEP OUT OF LINE Let’s forget about the general principles and try out some special ideas of planet WINE to create an exceptional wine. First thing concerned is TASTE, where we concentrate on the intrinsic quality and the overall palate of the nectar. At PLO GRAND BATARD we try to find a balance in each of our blends. Our wish is to create wines of great subtlety, which will seduce new disciples of Bacchus, the enlightened amateurs as well as the professionals of the bottle. The art of “good food” and “good wine” is lifted up to the level of fundamental science, which is one of the reasons for us to produce wines committed to gastronomy, to accompany and to elevate starters and main courses, without dominating them. This is possible thanks to the dedication to the vineyards, respecting the soil and the environment. In our cellar the challenge of the oenologist is to control the level of alcohol and the aromas as to avoid a too exuberant and harsh wine.
AUTUMN MORNING During a wine tasting different barrels of the 2012 vintage, the “Maitre” of PLO, guided only by the pleasures of the senses, came up with a melange of two grape varieties that had never before been mixed. Just like a composer of perfumes, he created his wine with his mind, soul and heart. However, his craftsmanship was not enough. It needs courage to blend a red grape, Cabernet-Sauvignon, with a white one, Chenin Blanc, thus giving birth to a new genre of wine. Grown on the fields of the Limoux area, this wine is not entitled to the AOP label as the blend of red and white grapes is not permitted, it is illegal. In France only a very small number of wines are allowed to hold this blend.

A PLACE In the Occitan language Plô means ‘small plateau’. The Grand Bâtart plot lies in the heart of the vineyard Plô Roucarels. Nestled in the hills of the Haute Vallée de l’Aude, in the sunny fields between Limoux and Carcassonne, the ‘terroir’ of Plô never ceases to surprise. In the distance one can see the Pyrenees, almost surreal, a magic picture that makes us dream…. The geographical position of the vineyard benefits from the influence of the Atlantic, which moderates the mediterranean climate of the region. Here, the cool nights and the heat waves in summer, cause climatical conditions that are favourable for a good maturity of the grapes. At the height of 350 meters various grape varieties are cultivated: Cabernet-Sauvignon and Syrah for the red and Chardonnay and Chenin for the white wines. The vineyards, planted on calcareous and stony soil, are traditionally cultivated with respect for ‘terroir’ and nature. This way we keep the uniqueness and authenticity of our grapes to ‘bring up’ and vinify our great wines.
ONE STRONG TEAM Julien Gil, our ‘maitre’ at Plô is a child of the country who has learned the ropes in the Médoc working for the great wine chateaus in the Bordeaux area. His wife, Julia, is originally from East Germany and she proudly wears the apron of the winemaker’s wife. Pierre Caizergues, who has been with us from the beginning of Grand Batârd and a long time friend, has travelled all over the world of vineyards to discover the various wines and their culture.
This team is trying to make a dream come true, not to be world champion, but to make a wine, which is unique in the world.

TINY PRODUCTION The wines of Plô Grand Bâtard are elevated in the best bacchic tradition and the quantities are rather small. Today we produce three cuvées: Chardonnay-Chenin, Cabernet Sauvignon Chenin and Syrah Chenin.
LE CHENIN All our wines are made with the famous Chenin Blanc, the famous grape variety from the Loire Valley. In France it remains one of the most underestimated grape varieties and there are few other regions where we find this grape. In the Haute Vallée de l’Aude, known in France for its great white wines, passionate wine makers have shown to be able to make the very best wines from the Chenin Blanc.
Its strength lies in its harmonious acidity, which gives longevity to our wines. It brings freshness, liveliness and roundness to each bottle. LIMOUX is the only appellation in the Languedoc which allows to use Chenin Blanc. It has also conquered South Africa, California and many other vineyards in the new world.
For us, Chenin Blanc, is, undeniably, a great ‘cépage’.

HARMONY “La Table de Franck Putelat” at the foot of the Cité de Carcassonne needs no further introduction. This chef, originally from the Jura but ‘Carcassonais’ by heart, is a tough guy. He never minces his words and states clearly that he wants to reach the top. Frank Putelat is a competitor out of the ordinary: golden medal at the Bocuse mondial in 2003, second Michelin star in 2012. He, however, doesn’t boast about his big success, even with his record of achievements, our star chef starts every day at zero. When the roads of Plô Grand Bâtard and Franck Putelat crossed each other it was out of the question that these two would not sit around the table and discuss the joy of pleasure and taste….. Between tradition and modernity our two philosophies met. Speaking as a godfather of Plô, our star chef is kind enough to supply us with recipes to accompany each of our wines.
